"Chocolate ain't chocolate".  Fine chocolate is a world of sensory immersion involving all 5 senses.  With over naturally occuring 500 flavour notes in cocoa, appreciating chocolate is similar to appreciating wine.  Cardboard cask for the fridge, or a finely hand-crafted flavour sensation using specific ingredients, prepared in a particular way, moulded at just the right temperature to create an iconic snap.

Wine and chocolate have more in common that you might realise.

They're both made from fermented fruit.  The darker, the more health benefits for you.

When somebody asks you if you'd like a glass of wine, a novice says 'yes please' whilst an appreciator asks... "What variety?  Where was is grown?  When was it harvested?  You should be responding the same when offered chocolate because the colour, the snap, the smell and the flavour are all influenced by the terroir, the fermentation, the roast, the cocoa solids, other ingredients, and the tempering.
